15min Breakfast: Breakfast Tacos
You can make anything into a taco, but breakfast tacos are a favorite in our house.
It’s easy - scramble some eggs, throw ‘em on a heated tortilla, toast whatever you want on top — boom, done.
Scramble Secrets
Cook LOW and SLOW — I set our stovetop between 3-4. If you cook onion + garlic prior to your eggs, let them cook, then take the pan off the burner and let it all cool down before dumping your eggs into the pan.
Whip your spices + herbs into your eggs, make sure your pan is warm (not hot) before your pour your eggs in.
Use a silicone spatula (so it doesn’t melt - we use these ones) to scrape the bottom of the pan, never letting the eggs cook to the bottom of the pan.
