Salad Recipe: Breakfast Salad.

A breakfast salad is the easiest way to get greens into your day. If you’re eating around 30 different types of plants per day, you’re winning — your gut health is stellar.

Sam’s “Build-A-Salad” 101

  • 2 different types of greens for the base. More if you’d like! We usually do spring mix and 1 type of kale because kale is a cruciferous veggies, i.e. it’s got extra protein

  • 1 type of herb. Sam loves mint, basil, and cilantro. If there are persimmons and pomegranates in the mix, we’re using dill

  • 1-2 types of fruit

  • 1-3 types of veggies

  • 1 type of seed

  • 1 type of nut

  • Fat: Extra Virgin Olive Oil or Avocado — 2 TBSP (roughly 1/2 an avocado per person and 1 TBSP EVOO)
